My curiosity for food has enjoyed great longevity. Throughout my academic and professional life, I鈥檝e been intrigued by the
structure of food 鈥� how it鈥檚 assembled and how even small tweaks can completely alter its taste, texture and characteristics.
This absorbing area of study has become my life鈥檚 work 鈥� and I鈥檓 excited to travel the path of discovery with my students,
colleagues and the wider world.
